While I did that manually, there are two websites that can generate random mosaic knitting charts. My favorite is Laura Kogler's generator, which lets you add symmetry and play with variations (dissolve and mutate).

I use Scott Pakin's mosaic chart app to check my work, but there's a random generator there, on the page after you've chosen the chart size.
