In honor of St David's Day, I decided to make my first-ever attempt at homemade Welsh cakes, using this recipe: https://www.instagram.com/p/DGlYZeKt3s3/
And the results were very, very yummy!

PS: For the filling, I used a combo of raisins and cranberries (my favorite!), but I've promised my 11-y-o that we'll make it again soon with JUST raisins, the way she likes best. Either way, the recipe was a total hit and one we'll be making many times!
