Set aside the filling.</p><p>In another bowl, blend oil and sugar. Beat in eggs, then blend in vanilla and lemon juice. Gradually add baking powder and flour. Fold in grated carrot.</p><p>Note that this is a VERY sticky batter.</p><p>Spread roughly half of the batter into the bottom of the baking tin. The stickiness of the batter will require you to use a spatula or spreading knife to gently push the batter into the sides and corners of the tin. The problem, I think, was the quinoa: difficult to dry after it's cooked.</p><p>Still, the slab was solid and I diced about 2 cups for the stew I was making. Where they myceliuam coating was present (most of the slab), it was exceptionally thick — due to extended fermentation, I imagine.
